Healthy on a budget

Summer is coming and soon Instagram will be full of photogenic fruit bowls and every model’s’ super healthy eating regime. But how can you achieve this lifestyle when you’re on a budget and don’t know where to start? Here’s’ a couple of this month's favourite healthy meals to help you out and where you can go to check out more! 

Healthy Homemade Burgers
A super quick and easy meal that won’t break your bank or your healthy eating plan!

Ingredients:

125g lean mince (look out for the low fat)

Cheddar (Again reduced fat makes this a more guilt free cheat)

Bun (optional)

1 potato

Salad

Peri Peri salt or other spice (Optional)

Method:

  1. Pre-heat the oven to 190 degrees (fan assisted ovens)

  2. Wash the potato and put in the microwave on full power for 4 minutes on either side to soften

  3. Chop up the potato into even sized wedges, season with olive oil, salt & pepper or spice such as peri-peri if available. Cook in the oven for 15-20 minutes, checking on them and turning them over to cook the other side half way through.

  4. Heat a dash of olive oil in a pan on a medium-high heat

  5. To prepare the burgers roll the meat into a ball using your hands, it is optional to stuff the middle with grated cheddar cheese or you could include some chopped red onion and peppers.

  6. Once the pan is hot pop the burger(s) in and cook for 3-4 minutes on either side

Ingredients:

3 tbsp of coconut oil or olive oil

2 eggs

2-3 ripe banana’s

60ml water or milk

pinch of salt

pinch of cinnamon (optional)

75g of rolled oats

110g of whole wheat flour

3 tbsp maple syrup to sweeten (optional)

Method:

​

1. To prepare, Pre-heat the oven to 160 degrees celcius and grease a 12 cup muffin tin if required.

2. Beat the oil, syrup and 2 eggs in a large bowl. Mix in the mashed bananas and follow with the milk, baking soda, pinch of salt and cinnamon. Mix well.

3. Next add the flour and oats to the bowl and mix until all combined.

4. Pour the batter evenly into the muffin cups and decorate the top with a sprinkle of oats and some brown sugar if you have any.

5. Bake in the oven for 22-25 minutes, test if theyre ready by pushing in a toothpick or fork into the centre of a muffin, if it comes out clean then they are cooked through. Serve warm with a bit of butter!

* The best thing about these muffins is that you can serve immediately or leave in the fridge for up to 4 days. They also freeze for 3 months so you can defrost and re-heat indivually.
